We love trying out and supporting new, locally-owned businesses around the neighborhood, and it doesn’t hurt when they are serving up some mouth-watering, smoked-on-site BBQ and made-from-scratch sides! From food truck to Stanley Marketplace, here’s the scoop behind Rolling Smoke Bar-B-Que.
Rolling Smoke Bar-B-Que was born in 2013 after owner, Terry Walsh, was laid off from his corporate job. After years of praise for his backyard BBQ cooking, Terry decided to use his love for BBQ to open a food truck in order to bring his delicious BBQ to Coloradoans to enjoy. The food truck was a success! In October of 2015 Terry met Mark Shaker, the man behind Stanley Marketplace in NE Aurora near Stapleton. Rolling Smoke was the last tenant to sign a lease inside Stanley, and their first brick-and-mortar location opened in 2017.
Rolling Smoke serves traditional BBQ meats, such as Pulled Pork, Beef Brisket, St. Louis Pork Ribs, Honey Bourbon Sausage, Hot Link Sausage… and everyone’s favorite, Burnt Ends. All meats are slow smoked on pit smokers on the west side of the marketplace, using hardwood to give an authentic BBQ experience. Meats are dry rubbed prior to smoking and no sauces are applied prior to serving a plate to guests. They also offer a variety of delicious sides, such as Baked Beans, Coleslaw, Potato Salad, Collard Greens, and our favorite, Smoked Mac-N-Cheese (it’s delish!), all of which are slow-cooked and made from scratch daily.
This past October, Rolling Smoke was featured on The Food Network show SEARious Meats, which was a fun and exciting experience for the BBQ joint, according to Terry.
